Ingredients
- 1 small onion, chopped
- 1 clove garlic, minced
- 2 tbs olive oil
- 1 lg potato, cubed
- 1/2 c. chicken broth
- 2 med zucchini, cubed
- 1/3 c. diced green pepper
- 1/2 c. chopped celery
- 1 tsp basil
- salt and pepper
- 2 med tomatoes, cut in chunks
- 1 tbs snipped fresh parsley

Directions
In a skillet, saute onion in oil until tender. Add garlic and saute 1 minute. Stir in potato and broth, cover and simmer for 10 minutes. Add zucchini, green pepper, celery, basil, salt and pepper. Cover and cook over low heat 5-6 minutes or until vegetables are almost tender. Stir in tomatoes; heat through. Transfer to a serving platter and sprinkle with parsley. Serve immediately. Yield: 4-6 servings.
