Ingredients
- 2 cups flour (could sub 1/2 cup with wheat germ)
- 1 cup cold butter (2 sticks) (Is this too much? another recipe only used 1/3 cup)
- 1/2 cup powdered sugar
- 4 beaten eggs
- 2 cups white sugar
- 1/2 cup lemon juice
- 1 tsp zest
- 1/2 tsp salt
- 1 tsp baking powder
- 4 T flour (1/4 cup)

Step 1
Cut each stick of butter into 8 pieces. Use food processor to combine it with the flour and powdered sugar until it looks like coarse cornmeal. Spread in greased 9x13 baking pan. Pat it down.
Bake at 350 for 15-20 minutes or until golden around edges. Remove from oven.
Mix eggs with white sugar. Add lemon juice and zest. Add salt and baking powder and mix. Then add flour and mix thoroughly. (This will be runny.)
Pour mixture on top of the crust and place back in oven. Bake for another 30-35 minutes. Then remove from the oven and sprinkle on additional powdered sugar. Let cool thoroughly and cut into bars.
