  • 2 eggs
  • 1 cup flour
  • 1 cup water
  • 1/8 lb. butter
  • pinch salt

Step 1

Beat eggs in a bowl. Heat water, add butter and salt. Mix together, then add flour; mix well with egg beater.

Grease an 8" skillet sparingly first time. Add a little batter to skillet, and swirl around to make a round crepe. Flip and cook other side.

Fill with a mix of ricotta, egg (1 egg per pound of ricotta), mozarella and a little Parmesan. Place in pan, top with sauce and a little more mozarella. Bake at 350 til hot. Voila!
