  • 1 sm. onion
  • 1 zucchini
  • 1 yellow squash
  • 1 sweet potato
  • 1 medium tomato
  • 1/2 tsp dried Italian seasoning
  • salt, pepper and garlic powder to taste
  • 1 c. shredded Italian cheese

Step 1

Preheat the oven to 400 degrees. Thinly slice vegetables. Spray the inside of an 8×8 square or round baking dish with non-stick spray. Place the thinly sliced vegetables in the baking dish vertically, in an alternating pattern. Sprinkle generously with salt, pepper, garlic powder and Italian seasoning.
Cover and bake for 20 minutes. Remove the foil, top with cheese and bake for another 10-15 minutes or until the cheese is golden brown.
