Sweet Potato Casserole

I love Thanksgiving. My favorite of all the food at Thanksgiving dinner is the sweet potatoes. Mmm Mm Mm! I just can't get enough! I was assigned to bring sweet potatoes to our extended family's Thanksgiving dinner and have been trying out a few recipes. This recipe is at the top of the list! This recipe could easily be doubled if you are feeding a crowd.

Ingredients
- Sweet Potato Mixture:
- 3 cups cooked and mashed sweet potatoes (I used about 5 medium sweet potatoes)
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 eggs, beaten
- 1/4 cup butter, melted
- Topping:
- 1 cup brown sugar
- 1/3 cup flour
- 1 cup chopped pecans
- 3 Tablespoons butter, melted

Preparation
Step 1
Preheat oven to 350 degrees F. In a large mixing bowl, combine mashed sweet potatoes, sugar, salt, vanilla, eggs and butter. Pour mixture into a greased 9x13" baking dish. In a small bowl, combine brown sugar, flour, pecans and butter to make topping. Sprinkle topping on top of sweet potato mixture. Bake for 30 minutes.
