Ingredients
- 4 large tomatoes, chopped
- 2 garlic cloves, minced
- 1/4 large red onion, chopped
- 1/2 jalapeño, minced
- 1 chili pepper with seed, minced (omit seeds for milder version)
- 1 large handful cilantro, roughly chopped
- 4 tbsp tomato purée (to desired consistency)
- 2-3 tbsp. lime juice (can sub. lemon)
- a dash cumin
- 1 tsp. low-sodium vegan vegetable stock powder (optional)
