Ingredients

  • 2 1/3 cups Bisquick
  • 1 1/2 cups lightly packed shredded carrots
  • 3/4 cup sugar
  • 1/3 cup chopped nuts
  • 1/4 cup sour cream
  • 1/4 cup vegetable oil
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla
  • 3 eggs

Step 1

Heat oven to 350 degrees. Grease bottom only of a 9 x 5 loaf pan. Mix all ingredients; beat vigorously for 30 seconds. Pour into pan. Bake until knife inserted in the center comes out clean, 50-55 minutes. Cool 10 minutes; loosen sides of loaf with a knife and remove from pan.
