Ingredients
- 8 cups cubed French bread
- softened butter
- 2 cups chicken broth
- 3 3eggs
- 1/2 cup milk
- 1 cup diced onion
- 1 cup diced celery
- 3 Tbsp. butter
- 1/4 cup chopped fresh parsley
- 2 Tbsp. minced fresh sage
- 1 tea. salt
- 1 tea. pepper

Step 1
Stale bread on a baking sheet in a 250 degree oven for 1 hour; remove bread and increase temp. to 400. Butter eight 6 oz. ramekins (or a muffin tin).
Whisk broth, eggs, and milk in a bowl; add to bread and toss gently. Let mixture stand until liquid is absorbed, at least 5 minutes.
Saute onion and celery in 3 Tbsp. butter in a skillet over medium-high heat until soft, about 3 minutes. Stir in parsley, sage, salt and pepper; cook 1 minute. Combine vegetables and bread mixture. Divide dressing among ramekins.
Bake dressing until browned and set, 45 minutes.
