Ingredients
- 30 large mint leaves, coarsely torn by hand
- 3-4 thick slices of fresh watermelon
- 12 oz. light rum
- 1/2 cup simple syrup
- 6 Tablespoons freshly squeezed lime juice (3 limes)
- Mint sprigs and watermelon spears for garnish

Preparation
Step 1
Use mortar and pestle to mash mint leaves. Remove and discard the rind and seeds from the watermelon. Puree the melon in a food processor.
Put the mashed mint into a large pitcher with 2 cups pureed watermelon, the rum, simple syrup and lime juice, and stir to combine.
To serve: Place ice cubes in glasses and pour the mojito mixture into the glasses. Garnish with fresh mint sprigs and watermelon spears.
