Ingredients
- 1/2 medium onion, chopped
- 1 Tbsp. vegetable oil
- 1 cup canned low-sodium diced tomatoes
- 1 cup frozen mixed vegetables
- 4 oz cooked beef, cubed or thinly sliced
- 3/4 tsp. low-sodium beef base
- 4 cups water

Step 1
1. In medium saucepan, saute onion over medium-high heat 3 minutes. Add tomatoes, frozen vegetables, beef, beef base and water.
2. Simmer until vegetables are tender, about 12 minutes. Season to taste with salt and freshly ground pepper.
