Ingredients

  • 1-3/4 c. all-purpose flour
  • 1/3 c. sugar
  • 2-1/2 t. baking powder
  • 1/4 t. salt
  • 1/2 c. creamy peanut butter
  • 1 egg
  • 3/4 c. milk
  • 1/3 c. butter, melted
  • 1/2 c. strawberry jelly

Step 1

Line a 12-muffin tin with paper liners. Combine the first four ingredients in a large bowl; set aside. In a separate bowl, mix together peanut butter and egg; add milk, 1/4 cup at a time. Mix in butter. Pour peanut butter mixture into dry ingredients, stirring to form a stiff batter. Drop a rounded tablespoonful of batter in the bottom of each muffin cup; make a thumbprint in each and fill with a teaspoon of jelly. Use remaining batter to fill muffin cups 2/3 full, being sure jelly is covered. Bake at 375 degrees for 20 minutes. Makes one dozen.
