Ingredients
- batch chinese pizza dough:
- 1 packet active dry yeast
- 9 oz warm water
- 13 oz unbleached white flour
- 4 tbsp olive oil
- 1/2 tsp salt
- 2 tbsp sesame seeds
- 1 tbsp soy sauce
- 2 cups wholemeal flour

Step 1
In a large bowl, commbine the yeast, warm water and white flour. Mix well to blend. Add the oil, salt, sesame seeds and soy sauce and mix thoroughly. Add the wholemeal flour and stir until the dough sticks together. Place the dough on a flat surface lightly dusted with white flour. Dust your hands with white flour and then knead the dough until it is smooth and elastic, about 5 minutes.
Roll the dough into a ball and place it in a lightly oiled bowl. Cover the bowl with a dish cloth and set in a warm, but not hot, place to rise until doubled in volume, about an hour.
When the dough has risen, roll it into a ball to make one 12 in deep pan pizza or divide it into 2 balls to make 2 12 in thin crust pizza. Before rolling out and topping the pizza, allow the dough to rest for 20 minutes. To bake, place in the center of a lightly oiled pan. roll outwards towards the edges filling the pan evenly.
