No-Bake Chocolate Cereal Cookies 1 Picture

Ingredients

  • 1/2 cup of honey
  • 1/4 cup of coconut oil (or non-dairy butter)
  • 1/4 cup of rice milk (or preferred non-dairy sub)
  • 1/2 tsp of vanilla
  • 1/4 cup of sunflower seed spread, like SunButter (or preferred nut-free spread)
  • 3 cups of Enjoy Life Foods Crunchy Flax with Chia Cereal
  • 1 cup of Enjoy Life Foods Dark Chocolate Morsels or Mega Chunks

Preparation

Step 1

Line two baking sheets with parchment paper and set aside.
In a medium size saucepan on the stove top, on medium heat bring the honey, coconut oil (or butter), and non-dairy milk to a boil.
Once it reaches a boil, remove from heat and add the vanilla and sunflower seed spread.
Stir until completely smooth.
Pour in the cereal and mix until all pieces are thoroughly coated.
Gently fold in the chocolate chips, careful not to overmix so they don't completely melt.
Drop spoonfuls of the cereal mixture onto the lined baking sheets.
Place baking sheets in the refrigerator and let chill for 30-40 minutes.
Cookies should peel right off the paper after chilling. Enjoy!
Depending on size of drops, will depend on yield. Approximate 18-24.
