Ingredients

  • 1 large fryer or hen-cooked and deboned (I use a roasted chicken from grocery)
  • garlic salt and chili powder
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 pkg (12) soft corn tortillas, cut in triangles
  • 1 large onion, finely chopped (you know me I don't put nearly this much)
  • 1/2 lb. American cheese, grated
  • 1 cup chicken broth
  • 1 can Rotel, drained and crushed
  • bell pepper, if desired
  • 3 cups grated cheddar cheese
  • 12 (6") fajita size corn tortillas, cut into 1/2 inch strips

Step 1

Layer ingredients in well greased 3-quart pan. Begin with chicken, sprinkle with chili powder and garlic salt, follow with 1/2 of soup, tortillas, onions, pepper, cheese then chicken broth. Begin 2nd layer with chicken, chili powder and garlic salt, *then tortillas, onions, peppers, cheese, soup, then broth. Spread Rotel tomatoes on top. 
Bake one hour at 350. Cover first half of cooking time to prevent dryness.

*Put second layer of tortillas next to chicken to prevent dryness.
