Ingredients

  • 2 cups smooth peanut butter
  • 1/2 cup soft butter
  • 2 cups icing sugar
  • 4 cups Rice Crispies
  • 2 cups sweetened shredded coconut
  • 500 g bag of chocolate chips
  • 1/2 square of Para wax

Preparation

Step 1

Cream the peanut butter and butter together in a large bowl. Then hand mix in the icing sugar at first and them smooth for one minute with the electric mixer. Hand mix in the Rice Crispies and the coconut by hand. Chill for 10 to 15 minutes.

Melt the chocolate chips and the wax in a double boiler.

Spray a wire cooling rack with non-stick spray and place it over a sheet of wax paper. For a smoother bottom edge use just the wax paper on top of a cookie sheet for easier handling. Use a pair of wooden skewers to dip the balls in the warm chocolate.


Place in the refrigerator for a final chill. May be stored in a plastic container in the refrigerator or stored in the freezer.


Form the peanut butter mixture into 1 to 1 1/2 inch balls and chill again for 10 minutes for best results. Run your hands periodically under cool water to make it easier to form the balls.
