Ingredients

  • 3 3/4 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. pumpkin pie spice
  • 1 stick unsalted butter softened
  • 1/2 c. shortening
  • 1 c. sugar
  • 1/2 c. brown sugar
  • 1 c. pumpkin puree (not pie filling)
  • 1 egg
  • 2 tsp. vanilla
  • cinnamon sugar to coat cookies (1/2 c. sugar, 1 Tbsp. cinnamon)
  • Hershey Caramel Kisses

Preparation

Step 1

Cream together butter and shortening. Add brown sugar and sugar, beat well.

Add the egg, salt, pumpkin pie spice, baking powder and pumpkin puree. Mix until combined.

Gradually add the flour while mixing until all the flour is incorporated.

Scoop out by the tablespoon and roll dough in cinn/sugar until well coated.

Place on parchment covered cookie sheet. Gently press cookies down with the bottom of a glass until slightly flattened.

Bake at 350 for 10 min. Once removed from oven place a hershey kiss in the center of each cookie, pressing slightly.
