Ingredients

  • Cooked leftover turkey
  • 1 onion chopped
  • 1 stick of butter
  • 1/2 cup of flour
  • 4 cups of milk
  • salt / pepper to taste
  • Dash of nutmeg
  • For Croquettes
  • Egg
  • Flour
  • Breadcrumbs (I like the Progresso Italian Breadcrumbs)

Preparation

Step 1

1 - Chop the Onion
2 - Chop the turkey or place in food processor
3 - Add butter to skillet and add onion
4 - Meanwhile, warm the milk. Do not boil
5 - When onions get translucent, add the flour and stir to remove clumps
6 - add salt and pepper to taste
7 - add pinch of nutmeg

...when it is a creamy consistency
8 - slowly add the milk, constantly stirring to not have any clumps
8a - continue to stir for about 10 minutes
9 - Add the turkey

10 - place in a shallow dish
11 - cover and place in the refrigerator for at least an hour

12 - make the croquettes.... flour, egg, breadcrumbs..... do this for all the croquettes
