Ingredients

  • For one batch of soup:
  • 5 pkgs. (16 oz each) dre3id beans; lima, gr3at northern, kidney, pinto and split peas (enough for 4 batches of soup)
  • 3 Tbsp,. minced chives
  • 1 tea. dried savory
  • 1 tea. salt
  • 1/2 tea. cumin
  • 1/2 tea. pepper
  • 1 bay leaf
  • 3 beef bouillon cubes
  • 2 1/2 qts. water
  • 1 can (14 1/2 oz) stewed tomatoes

Step 1

Combine beans; divide into four even batches, about 3 3/4 cups each.

to make one batch of soup: wash one batch of beans. Place in a stockpot; add enough water to cover. Bring to a boi8l; cook for 3-4 minutes. Remove from the heat; cover and let stand 1 hour.

Tie spices in a cheesecloth bag. Drain and rinse beans. Return to stockpot; add bouillon, spices and water. Bring to a boil. Reduce heat; cover and simmer 1 1/2 hours or until beans are tender, stirring occasionally. Discard spice bag. Add tomatoes and heat through.
