Ingredients
- FOR THE PANCAKE
- 4 tea. butter, divided
- 1/2 cup flour
- 1/2 cup milk
- 2 eggs
- 3 Tbsp. sugar
- 1/2 tea. vanilla
- pinch of salt
- FOR THE FRUIT
- 1 lb. peaches or nectarines, pitted and sliced
- 8 oz. red plums, pitted and sliced
- 1/2 cup maple syrup
- 1/2 cup raspberries
- 1/2 cup blueberries
- sour cream
- powdered sugar

Step 1
Preheat oven to 400 degrees with rack in the lower third.
For the pancake: place 1 tea. butter in each of four 6" low-sided dishes (or 4 tea. butter in one 10" glass pie plate). Transfer dishes to preheated oven; remove dishes when butter has melted. Do not allow to cool.
Whisk together flour, milk, eggs, sugar, vanilla and salt together until smooth.
For the fruit, spread peaches and plums in a shallow baking dish. Pour syrup over fruit and toss gently to coat. Bake fruit until bubbly, about 20 minutes. Add berries and stir gently.
Pour 1/3 cup batter into each dish (or all into the pie plate). Do not stir batter in with melted butter
Bake pancakes until golden and puffed, 15-20 minutes.
Spoon fruit inside puff pancakes; dollop with sour cream. Sprinkle with powdered sugar.
