Ingredients
- 2 T butter
- 1 lb meat (absolutely up to you, mix and match)
- 1/4 t cayenne
- 1/2 tsp black peppet
- 28 oz stewed tomatoes
- 1 c green pepper
- 1 c onion
- 1 c chopped celery
- 1 T chopped garlic
- 2 1/2 chicken stock
- 2 cups uncooked long grain rice
- add spicy to taste- siracha, hot sauce, red pepper flakes
- (if brown rice use 3 1/4 c broth for same amount rice)

Step 1
Preheat oven to 350 degrees
Blend spices and set aside
Melt butter and brown the meat (also really good with grilled meat), ideally in a dutch oven but you can make this in a large fry pan and transfer to large baking dish
Add spices and stir
Add vegetables (including tomatoes without juice) and cook until clear
Add tomato juice and chicken stock
Add rice
Cover and bake at 350 degrees for 35 minutes (or for 60 minutes if brown rice)
