Ingredients

  • 1/3 cup cooked lean ground beef
  • 3 tablespoons taco sauce
  • 4 large burrito-size wheat flour tortillas
  • 4 oz blue cheese, crumbled
  • 10 oz chopped frozen spinach, thawed & squeezed dry
  • 1/2 teaspoon red pepper flakes

Preparation

Step 1

Stir beef and taco sauce together in a bowl. Lay two tortillas down and divide beef mixture between them. Divide cheese, spinach, and red pepper flakes on top of beef mixture. Top with remaining tortillas.

Heat a large skillet over medium-high heat. Place one quesadilla in skillet and cook until brown spots appear on bottom tortilla (3-4 minutes). Flip and repeat. Remove to cutting board and keep warm. Repeat with other quesadilla.

Cut each quesadilla into 4 wedges for a total of 8 wedges and serve.

Per serving: 2 wedges = 2 weight watchers points
