Penne with Sausage and Peppers

Ingredients
- 1 lb penne pasta
- 12 oz fresh sweet or hot Italian pork sausages, removed from casing
- 1 Tbsp olive oil
- 3 peppers, thinly sliced
- 1 medium onion, thinly sliced
- 2 tsp minced garlic
- 1 can (28 oz) crushed tomatoes with basil
- 1 ⁄2 tsp each salt and freshly ground pepper

Bring a large pot of lightly salted water to a boil. Add pasta; cook as package directs.
Meanwhile, cook sausage in a large nonstick skillet over medium heat 5 minutes, or until browned, breaking up chunks with a wooden spoon. Remove to a plate.
Add oil, peppers and onion to skillet. Cook, stirring occasionally, 5 minutes, or until lightly browned. Push vegetables aside, add garlic and sauté 1 minute until fragrant. Add sausage, tomatoes, salt and pepper; stir to combine all. Bring to a boil, reduce heat, cover and simmer 10 minutes to blend flavors.
Drain pasta, transfer to a large serving bowl and add sauce. Toss to mix and coat.
