  • 3 1/2 c steam and mash frozen cut russet potatoes
  • 1/4 c nonfat buttermilk
  • 1/4 c tub style light cream cheese
  • 2 T yogurt based spread (Brummel & Brown)
  • 1 T chopped chives
  • 1/4 t salt
  • 1/4 t pepper

Step 1

1. Cover the potatoes (in a bowl) with plastic wrap; vent. Microwave at 9 minutes or until tender. Stirring after 4 minutes.
2. Add remaining ingredients and mash.
