Ingredients

  • 1 pkg smoked sausage, cut into bite-size pieces
  • 2 cups cooked rice
  • 8 oz button mushrooms
  • 1/2 cup chopped onions
  • 1/2 cup chopped red pepper
  • 1 or 2 jalapeno peppers
  • 1 cup frozen peas (thawed and drained
  • 16 oz shredded mozzarella cheese
  • 16 oz processed cheese sauce
  • 1 stick of butter

Preparation

Step 1

1. Preheat oven to 375F. Butter a 2qt casserole dish.

2. Combine rice, mushrooms, peppers, peas and cheese sauce. Spoon mixture into the baking dish. Evenly place sausages pieces into the mixture and top with shredded cheese.

3. Bake for 20-30 mins or until bubbly and brown.
