- 4 SKINLESS, BONELESS CHICKEN BREASTS
- 3 EGGS
- 1 C PLUS 2 T FLOUR
- 2 C PANKO BREAD CRUMBS
- 1 C COCONUT
- SALT AND PEPPER TO TASTE
- 2 T BUTTER
- 2 C HEAVY CREAM
- PINA COLADA MIX
- 2 T SUGAR

Step 1
SEASON CHICKEN WITH SALT AND PEPPER. PASS IT THROUGH FLOUR, EGG AND PANKO-COCONUT MIX.
SEAR BREASTS IN A SAUTE PAN WITH OIL AND FINISH IN THE OVEN AT 350*
FOR THE SAUCE, MELT BUTTER IN SAUCE PAN, ADD 2 T FLOUR, POUR IN HEAVY CREAM AND LET IT REDUCE ON LOW HEAT.
ADD PINA COLADA MIX AND SUGAR TO TASTE, ABOUT 2 T.
