Ingredients

  • 1 Tablespoon olive oil
  • 1 large onion, minced
  • 1-2 cubes frozen garlic or 1-2 cloves garlic, chopped
  • 1 cup TJ's Organic Quinoa, rinsed and drained according to box directions
  • 2 cups TJ's Vegetable Broth
  • 1/8 teaspoon crushed red pepper flakes, optional
  • 4 cups (6 oz. package) baby spinach, coarsely chopped
  • salt and pepper, to taste

Preparation

Step 1

Heat oil in a large skillet over medium-high heat. Add onion and garlic; cook stirring frequently, until onion is tender (3-5 minutes)

Add quinoa to skillet; cook stirring frequently, until quinoa starts to turn golden brown (about 2 minutes)

Add broth, black pepper and red pepper flakes to skillet; bring to boil. Cover and reduce heat to low and simmer for 10-13 minutes. Stir in spinach. Cover skillet and cook until spinach and quinoa are tender and liquid is absorbed (about 3-5 minutes)

Season with salt, if desired.
