Ingredients
- 1 1/4 lb brussels sprouts
- 2 Tbsp olive oil
- 1 tsp fresh thyme leaves
- 1 clove garlic, thinly sliced
- 1/8 tsp salt
- 1/4 tsp pepper
- 1 tsp red wine vinegar
- 1/4 cup coarsley grated Parmesan cheese

Preparation
Step 1
Preheat oven to 450 degrees. In large, jelly-roll pan, toss brussel sprouts, olive oil, thyme, garlic, salt and pepper. Spread evenly.
Roast 20 minutes, stirring once.
Toss with vinegar and cheese.
Makes 3 cups.
