Ingredients
- 1 lb ground beef
- 1 medium onion, chopped
- 1 can Rotel tomatoes with green chiles
- 1 (10-ounce) can tomatoes
- 1 (8-ounce) can tomato sauce
- 1 pkg taco seasoning mix
- 1 pkg flour tortillas
- 1 pkg Monterey jack cheese, shredded
- 1 cup sour cream
- 1/4 cup ripe olives, sliced

Preparation
Step 1
Brown ground beef. Add onions and cook until tender. Drain well. Add taco seasoning mix, all tomatoes, and tomato sauce to the meat and onions. Simmer about 15 - 20 minutes.
To assemble the casserole, start with the meat sauce in an oiled 9 X 13 baking dish. Then add tortillas, cut into strips or pieces, the shredded cheese, sour cream and meat sauce again. Layer again.
Bake at 350 degrees for 30 minutes. Just before serving, add sliced olives to the top. Let stand about 5 minutes before serving.
