  • 1 pkg. Green Lentils
  • 1 pkg. - Faro
  • 1 pkg. - Mixed beans
  • 5 carrots - peeled
  • 1 bunch of celery
  • 3 white or yellow onions
  • Water
  • Salt
  • Pepper
  • Olive Oil

Step 1

For the soup, we use 3 pots, this is because all the grains and beans cook at different times. We make sure that we are using the same 'weight' package of each ingredient, equal distribution. We also grind our mirepoix in a food processor. So the recipe is below. Let me know how it turns out!!!

Take the veggies and puree or grind them in a food processor. Divide the pasta amongst three pots. Add oil, and saute. once the veg is sauteed, add a package of the beans, lentils, and farro to each of the pots. Add enough water to each pot to slightly cover the grain/bean. Continue to cook on low to medium heat, the grains will soak up all the water, make sure to check water levels throughout the cooking time. Add salt and pepper. Do this according to flavor and taste, make sure to season each pot individually.

Once the lentil or grain is complete, it will be soft to the bite but still give a little resistance. Cooked through all the way. Pull each pot off the stove and mix together in the largest pot all 3 pots. Taste for final salt and pepper addition. Top with either homemade sausage or slices from links from your local butcher. Also top with a little olive oil and parmesan cheese.
