Ingredients

  • 3 lbs beef for meatballs – no oregano
  • 1 soup bone
  • 2 lbs round steak cut into cubes
  • 2 bunches escarole chopped – boil for twenty minutes and rinse thoroughly (gets rid of bitterness)
  • 1 lb bag carrots
  • 4-5 stalks celery
  • 1 large onion
  • 1/3 box orzo
  • Garlic salt
  • Garlic powder
  • Pepper
  • Bay leaf
  • Basil
  • Parsley

Sear beef with small amt of olive oil.
Add 2 quarts beef stock – beef bouillion paste is the best
