Ingredients
- 1 lb frozen edamame (cook per package instructions)
- 1 red bell pepper, diced
- 1/2 cucumber, peeled, seeded, and diced
- 1/3 cup jicama, diced
- 1/3 cup carrots, diced
- 1/4 cup red onion, finely diced
- 1/4 cup dried apricots, diced
- 1 tbs purple sage chopped
- 1 tsp cinnamon
- 1 tsp cumin
- 1 tbs country Dijon mustard
- 3 tbs EVOO
- 4 tbs seasoned rice vinegar
- Salt and pepper to taste
