Ingredients
- 1 sleeve saltine crackers
- 5 T unsalted butter
- 8 oz. white mushrooms, thinly sliced
- 1 large onion, finely chopped
- 1 1/2 t salt
- 1/2 t pepper
- 2 carrots, coarsely shredded (about 1 cup)
- 2 ribs celery, coarsely shredded (about 1/2 cup)
- 1/4 t baking soda
- 2 large eggs, lightly beaten

Step 1
Position a rack in the upper third of the oven and preheat to 400 F. Grease 9x13" baking pan. Crush saltines into fine crumbs over a large mixing bowl.
In a large skillet, melt 1 tablespoon butter over medium heat. Add the mushrooms and cook, stirring, until browned, about 5 minutes. Add to the saltines.
Add 3 tablespoons butter, onion, salt, and pepper to skillet and cook, stirring often, until the onion is softened, about 8 minutes. Add to saltines, then add the carrots, celery, baking soda, eggs, and 1/4 C water. Mix well.
Spread the mixture evenly in a prepared dish. Melt the remaining 1 tablespoon butter and brush on top. Bake until golden, about 25-30 minutes. Cut into squares and serve.
