Ingredients

  • Add to a bread machine in the following order:
  • 1 3/4 cups warm water
  • 4 1/2 cups BREAD flour
  • 2 TBSP granulated sugar
  • 2 tsp. salt
  • 2 tsp. bread machine yeast
  • Sprinkle the sugar and salt close to the edges of the pan.
  • Make a well for the yeast in the center of the flour
  • Don't let the yeast touch the salt or water.

Preparation

Step 1

1. Add all ingredients to the pan and let the bread machine mix and do the first rise. Set to "dough" setting.

2. Remove from the pan and cut dough into 3 equal parts.

3. Roll each part without adding extra flour right on the counter. Squeeze air bubbles out and if it springs back to quickly when trying to lengthen it, let it rest a few seconds. Bread should be the length of your pan and about 1 1/2 to 2 inches in diameter.

4. Cover baking pan with parchment paper and lay baguette dough onto it. Spray plastic wrap with oil spray and cover. Put a kitchen towel over that while allowing to rise.

5. Allow to rise 2-4 hours (about 4 hours for 68 degree home). Peel plastic off carefully so it doesn't stick and cause the dough to fall. Sprinkle tops with a little flour. Use a sharp knife and do about 4 diagonal slices across the tops approx. 1/4" deep just before baking.

6. Preheat oven to 350F. Bake for 22-25 minutes.
