Ingredients
- turkey carcass
- 2 onions cut into chunks
- 2 carrots cut in chunks
- 3 celery stocks cut in chunk
- 1 bunch fresh parsley
- 4 cloves garlic smashed (unpeeled)
- 1 t black peppercorn
- 2 bay leaves

Preparation
Step 1
Cut the carcass into 4 or 5 pieces. Combine all ingredients in stockpot. Cover with cold water. Bring to a boil then reduce heat to low. Simmer about 2 hours occasionally skimming any foam or fat from the surface. Pour through a strainer. Discard the solids.
