Ingredients

  • 3 1/2 lbs. potatoes, peeled and quartered
  • 1 8 oz. package cream cheese, cut up and softened
  • 1 8 oz. carton dairy sour cream
  • 2 tsp. yellow mustard
  • 3/4 tsp. salt
  • 1/2 tsp. ground black pepper
  • 4 slices bacon, crisp-cooked, drained, and crumbled
  • snipped chives (optional)

Step 1

Preheat oven to 350 degrees. Cook potatoes in boiling water for 20 to 25 minutes or until tender. Drain and mash. Add cream cheese, stirring until combined. Gently stir in sour cream, mustard, salt and pepper.

Lightly grease a 2-quart casserole or 2-quart square baking dish; spoon potato mixture into prepared dish.

Bake casserole, uncovered, in the preheated oven for 30 to 35 minutes or until heated through. Top with bacon and, if desired, chives.

This is my new go-to mashed potatoes recipe. I added a little roasted garlic to the potatoes before mashing, and the commenter below is right on about the addition of grated cheddar on the top before baking, as I did the same thing and it was great! With or without garlic/cheddar, this is a good solid recipe that everyone will love!

Made for years is & loved by all! Forget the mustard, but add 5-6 large cloves of sliced garlic in water. Whip potatoes w/cooked garlic for a wonderful flavor. For ham/pork dishes sprinle grated cheddar on top of casserole last 15 minutes of bake. Make up 1-2 days before entertaining and refrigerate Bring to room temperature before baking. Enjoy!
