California Candied Lemon Cookies

Ingredients
- Candied Lemon Slices:
- 1 cup granulated sugar
- 1/2 cup water
- 2 lemons, very thinly sliced
- Cookies:
- 2 cups all-purpose flour
- 1/2 tsp. baking powder
- pinch salt
- 2 tsp. finely grated lemon rind
- 2 tbsp. lemon juice
- 3/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup icing sugar

Step 1
Lemon slices: In saucepan, combine sugar and water and bring to a boil. Add lemon slices and remove from heat. Cover and let stand until cool.
Cookies: in bowl, whisk together flour, baking powder and salt. In another bowl, using mixer beat butter and sugar until smooth. Beat in lemon rind and juice until combined. Add flour mixture and beat until combined. Divide dough into 2 7" logs and wrap with plastic wrap. refrigerate for at least 2 hours or until firm.
Cut 1 log into 1/4" thick slices and place on parchment paper lined baking sheet and place one slice of lemon onto each cookie. Bake in 350F oven for about 10 mins. or until light golden around edge. Let cool on rack. Repeat with remaining dough and lemon slices.
Tip: lemon slices may be a bit larger than the cookie, but they will fit once cooked. Candied lemon slices can be made up to two days ahead. Store in airtight container for 2 days or in freezer up to 1 month between parchment paper until ready to serve.
