Ingredients

  • 12 Graham crackers, finely ground
  • 3/4 C +3T Sugar
  • 4 T Unsalted butter, melted
  • 1 # Cream Cheese, room temp
  • 2 Eggs
  • 1 Egg Yolk
  • 3/4 C Eggnog
  • 1 T+1 1/2t Flour
  • 1 T+1t Brandy
  • 1 t Vanilla extract
  • 1/2 t Fresh nutmeg ( + for dusting)
  • 1/4 t Salt

Preparation

Step 1

1. Preheat oven to 35o degrees.

2. Spray 9” square pan with nonstick spray. Stir together graham crackers, 3 T sugar, and the melted butter. Press into bottom of pan. Bake 12-15 mins until brown around edges. Let cool.

3. Beat cream cheese until fluffy, about 2 mins. Add remaining ¾ C sugar, eggs, yolk, eggnog, flour, brandy, vanilla, nutmeg and salt. Beat til smooth. Pour filling over crust.

4. Set pan in a roasting pan, add hot water to come halfway up sides of baking pan. Bake 40-45 mins. Until set. Remove from water bath and cool on wire rack about 30 mins.

5. Refrigerate for at least 3 hours or overnight.

6. Cut into 1 ½ by 3 inch bars. Lightly dust tops of bars with freshly grated nutmeg just before serving.
