Ingredients

  • 2 2 1 30 2 bowl, beat cake mix, margarita mix, oil, 1 tablespoon lime peel and the egg whites with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour batter over pretzel mixture.
  • 3 3 35 to 40 2 40 minutes or until light golden brown and top springs back when touched lightly in center. Cool completely, about 2 hours. Frost with whipped topping; sprinkle with additional lime peel. Store covered in refrigerator.

Heat oven to 350°F (or 325°F for dark or nonstick pan). Grease bottom only of 13x9-inch pan with shortening and lightly flour (or spray bottom with baking spray with flour). In medium bowl, mix pretzels, sugar and butter. Sprinkle evenly on bottom of pan; press gently.

In large bowl, beat cake mix, margarita mix, oil, 1 tablespoon lime peel and the egg whites with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour batter over pretzel mixture.

Bake 35 to 40 minutes or until light golden brown and top springs back when touched lightly in center. Cool completely, about 2 hours. Frost with whipped topping; sprinkle with additional lime peel. Store covered in refrigerator.

Look for the bottled pale green nonalcoholic margarita mix in the soft drink section of the supermarket. It is usually on the shelf with club soda, tonic water and other mixers.

took this recipe and changed it a bit...used 1/3 cup frozen limeade thawed with 1 cup water preparing the cake also added zest from 2 small limes and a splash of green food coloring to the white cake...after baked and cooled, removed it from the sheet pan and cut horizontally and filled with a key lime custard from a pie mix....placed the pretzel mixture in the bottom and replaced the cake...drenched the top of the cake with some of the limeade with a bit of tequila (1/4 cup)....then iced with canned white icing thinned with a little limeade and zest...was so good and moist served cold
