Ingredients

  • Dressing:
  • 1 red onion
  • 1/2 bunch broccoli
  • 1/2 head cauliflower
  • 2 tomatoes
  • 1 English cucumber
  • 1/2 lb feta cheese
  • 1 hard cooked eggs
  • 34 cup olive oil
  • 2 Tbsp red wine vinegar
  • 2 Tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp oregano
  • 1/4 tsp pepper
  • q clove garlic, minced

Preparation

Step 1

Peel onion and cut in chunks. Soak in ice water for 30 minutes. Drain and set aside.

Parboil broccoli and cauliflower florets for 3 minutes. Place in cold water. Drain.

Cut everything else in chunks.

Mix dressing. Drizzle over salad.
