Ingredients
- 1 cup unsalted butter, softened
- 1 3/4 cups sugar
- 4 eggs
- 6 oz low-fat lemon yogurt
- 1 tbsp grated lemon zest
- 1/4 cup lemon juice
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt
- 3 cups cake flour

Step 1
1. Preheat oven to 350°F. With a flat beater on speed 4, beat butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
2. Slow the mixer to speed 2 and add yogurt, vanilla, and lemon juice. In a separate bowl, mix the baking powder, salt, and cake flour. Add the dry mixture to the wet mixture in two additions.
3. Pour the batter into a greased and floured Bundt cake pan. Bake at 350°F for 40 – 50 mins. Use the toothpick method to check if cake is done.
