Chicken Enchiladas

Ingredients
- 2 cups chopped, cooked chicken
- 3 oz cream cheese
- 1/4 cup onion
- 12 6-inch tortillas
- 16 oz. can tomatoes
- 1 cup sour cream
- 1 cup shredded Monterey Jack cheese
- 4 oz green chilies, chopped
- 1/2 tsp coriander
- 1/2 tsp salt
- 3/4 tsp salt
- 2 Tbsp cooking oil

Step 1
Mix chicken, onion, cream cheese, and 3/4 tsp salt. Put a couple of spoonfuls of mixture on each tortilla and roll. Make sure mixture goes end to end.
Sauce: Blend tomatoes, chilies, 1/2 tsp salt, coriander until smooth. Add sour cream.
Pour sauce over enchiladas. Bake at 350 degrees for 30 minutes. Cover with cheese. Bake until cheese melts.
