Ingredients
- Stuffing:
- 2 1/2 lbs. ground meat (lamb or beef)
- 3/4 cup cracked wheat
- 1 onion, finely chopped (about 1 cup)
- 1 1/2 tsp. salt
- 1/4 tsp. each: pepper
- 1/8 tsp. cinnamon
- 6 cups vegetable oil
- 7 onions, finely chopped
- 400 grams ground meat (lamb or beef)
- 1 cup butter
- dash pepper and cinnamon
- 1 tbsp. salt
- 2 tbsp. summac
- 3/4 cup pine nuts

Step 1
Wash cracked wheat. Add onion to meat and knead well. Add seasoning. Add 1 cup water and knead again. Set aside and cover with a wet cloth. Stuffing: saute onions in butter with meat for 15 mins. Remove from heat and add summac and pine nuts. Mix well. With wet hands, mould mixture into egg-like shapes. Hold each ball in hand and make a hole in it. Fill with 2 tsp. stuffing.
Moisten opening and pinch closed. Deep fry in hot oil and do not stir for 2 mins.
Option:
Mix first group of ingredients. Soak wheat one hour in cold water and drain. Thoroughly mix remaining ingredients except butter. Pat into buttered 9" square pan. Bake in a 375F. oven for 1 hour.
