Ingredients
- 3 cups flour
- 2/3 cup rice flour
- 1 tsp. salt
- 3/4 cup instant dissolving sugar or fine granulated sugar
- 2 cups butter, cubed
- 1 cup chocolate chips
- sifted granulated sugar for garnish

Preparation
Step 1
In large bowl, sift together flours and salt. Stir in sugar. Rub butter into flour with your fingertips until mixture resembles fine breadcrumbs. Knead mixture until it forms a ball, 5-10 mins. Knead in chocolate chips. Shape into circles and place on ungreased cookie sheets. Prick with fork. Bake at 300F for 1 hour or until pale gold. Sprinkle with sifted sugar. Cool on baking sheets.
