Ingredients

  • 1 tablespoon Olive oil
  • 1 cup Onion diced
  • 1 cup Mushrooms sliced
  • 1/4 cup Green bell pepper diced
  • 6 cloves Garlic crushed
  • 3/4 cup Dry red wine
  • 1/4 cup Fresh parsley chopped
  • 1 Tbsp. Sugar
  • 1 tsp. Dried Oregano
  • 1 tsp. Dried Basil
  • 1/2 tsp. Dried rosemary crushed
  • 1/2 tsp. Pepper
  • 1/4 tsp. Salt
  • 2 Bay leaves
  • 1 can Whole tomatoes - 28 oz can
  • 1 can Tomato paste - 6 oz.

Preparation

Step 1

Heat olive oil in a dutch oven over medium-high heat. Add onion, mushrooms, bell pepper, and garlic. Saute for 5 minutes til tender. Add remaining ingredients and bring to a boil. Cover, reduce heat, and simmer 30 minutes, stirring occasionally.
