Ingredients

  • 4 lb (approx) chuck roast
  • 2 sweet onions chopped
  • 5 carrots chopped into chunks
  • 2 cups of beef broth (I used Better then Bouillon)
  • 1/2 cup light brown sugar
  • 1/4 cup balsamic vinegar (no substitutions!)
  • 1 T soy sauce
  • Pinch pepper
  • 1/4 tsp red pepper flakes
  • 3 cloves garlic, chopped fine
  • Zest of a small orange

Preparation

Step 1

Put meat and vegetables into slow cooker. Mix together remaining ingredients. Mix well to dissolve sugar then pour over meat.

Set on low and cook for 7 hours (approx).

Take the meat and vegetables out and pour the liquid into a saucepan and simmered and mixed in about 2 T cornstarch mixed with a little water. Simmer a few minutes to thicken.
