Balsamic Pot Roast

Ingredients
- 4 lb (approx) chuck roast
- 2 sweet onions chopped
- 5 carrots chopped into chunks
- 2 cups of beef broth (I used Better then Bouillon)
- 1/2 cup light brown sugar
- 1/4 cup balsamic vinegar (no substitutions!)
- 1 T soy sauce
- Pinch pepper
- 1/4 tsp red pepper flakes
- 3 cloves garlic, chopped fine
- Zest of a small orange

Preparation
Step 1
Put meat and vegetables into slow cooker. Mix together remaining ingredients. Mix well to dissolve sugar then pour over meat.
Set on low and cook for 7 hours (approx).
Take the meat and vegetables out and pour the liquid into a saucepan and simmered and mixed in about 2 T cornstarch mixed with a little water. Simmer a few minutes to thicken.
