Not Your Grandma's Oatmeal

Oatmeal is a wonderful, warm, delicious way to start your day, but the same old flavors can get a little boring and lead to the "mush" type nickname my grandpa gave it. My grandparents were married for 65 years and, at least in those years I can remember, Grandma made oatmeal nearly every day. I would have called it mush too! These recipes are sure to end any oatmeal blues you may have been feeling. Let's just say, this isn't your Grandma's oatmeal!
You may think you're biting into a warm-from-the-oven oatmeal cookie with how good this breakfast treat tastes. It's wonderful served with milk. -Arlene Riehl, Dundee, New York

- 3 cups quick-cooking oats
- 1 cup packed brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 eggs
- 1 cup milk
- 1/2 cup butter, melted
- Additional milk

Step 1
In a large bowl, combine the oats, brown sugar, baking powder, salt and cinnamon. In another bowl, whisk the eggs, milk and butter. Stir into oat mixture until blended.
Spoon into a greased 9-in. square baking pan. Bake at 350 degrees for 40-45 minutes or until set. Serve warm with milk. Yield: 9 servings

Grandkids loved it. I mixed it up the night before for convenience and to let the oats soak up the liquid. My granddaughters have requested that next time I add apples or pumpkin.
This was soooooo yummy. The perfect chilly morning breakfast. So much better than plain old oatmeal. I used old fashioned oats and it worked equally well--just a little heartier.
This has a fantastic taste...but, I guess mine wasn't set...it wasn't firm at all...just sort of mealy...I just added some milk and raisins to it the next morning and it tasted great. Is it supposed to be firm?

I forgot pumpkin, of course. We also eat ours like a coffee cake without milk.
I love baked oatmeal! Here is my lower fat version - 2 c rolled oats, 1 c quick cooking oats, 1/2 c packed brown sugar, 2 t baking powder, 1 T cinnamon, 2 egg equiv. (egg beaters), 1 c milk, 1/4 c oil, 1/4 c applesauce (I use chunky homemade that I freeze in 1/4 cup amounts) I have also made choc. chip, banana, crushed pineapple, peach, dried cherry and almond. So many options!
I was thinking this recipe was going to end up being more like a crunchy bar, but mine ended up very moist - almost like a coffee cake. I really like the flavors, it just isn't what I was looking for.
I first found a 'baked oatmeal' recipe about 3 weeks ago, made it, and it was a total hit! My husband would usually just not even try something like this but he did and loves it! I just made our third recipe which is the same as this one except oil instead of butter. I also add raisins (after microwaving them with a little water for 1 minute to make them soft). Such a good breakfast! I also cut it up into bars, freeze them, put them in a bowl cover them with milk then microwave for a minute and half. So good!
Try again, this time leave out the Baking Soda. That will also bring the Sodium level down to a much more healthy level. Cheers!
This was so YUM!!! I ended up substituting a banana for the 2 eggs because I was out of eggs. Tasted great! Topped this with sliced/skinned apples that I sauteed in butter, 2 tsp vanilla & a couple dashes of cinnamon. Did I mention it was YUM??!!!
I've also made this for years. Make in a 9x13 pan...with the less sugar and 1/4 cup applesauce, 1/2 cup butter plus vanilla. Add raisins and walnuts. This make 8 nice sized servings. We always send this frozen with family who are flying home from a visit. Good travel food also. The old-fashioned oats make a completely different and better texture than the quick oats..
Really good! Halved the recipe to try it out, but will definitely make the whole recipe next time. Great for breakfast or a snack.
My family LOVED this recipe! My 15 year old asks for it for breakfast and snacks when he gets home from school. It was great as written. I will try reducing the sugar next time. I did add dried fruit and nuts with great results.
We loved it! The only change I made was to reduce the brown sugar to 3 heaping tablespoons, because my husband has high sugar. I sauteed some Granny Smith apple wedges as a topping and the whole family loved this for a special breakfast. Perfect for a snowy morning!
We love oatmeal for breakfast (just the 2 of us) grated some apple, added dried cranberries, more cinnamon/ apple pie spice - the house smells so heavenly!! will be making again!! we froze some for another morning - shared with my daughter and she could not say enough about it..
I have made this recipe for 10 years and every time I make it for someone who has not had it, they ask for the recipe. My sister, who never bakes, once made it in the middle of the night b/c she had to have it. It is a wonderful mixture of sweet and moist and satisfying. I always really pack the brown sugar and even mound it so that it's sweet enough. What's also great is that so many people have never had anything like it, and so you feel like you're making something new and special. It's fabulous!

Made this following the recipe the first time and seemed sort of bland, bit still good. Added some nuts and dried fruit the second time plus doubled the recipe and put into a bigger pan and it turned out amazing! This with will be a go to recipe for our family!
I made this for breakfast at a mini family reunion and everyone loved it. It was so simple!
My daughter gave me this recipe and I love it. In fact I have given it to several friends and they have passed it on. We put in raisins and nuts. It delicious and easy.
