Ganache-Filled Fried Wontons

Ingredients
- dipping sauce:
- 2 1/4 " slices fresh ginger
- 1 1/3 cup water
- 3/4 cup sugar
- 2 who;le star anise
- 1 2" cinnamon stick, broken
- 5 whole cloves
- 1/2 vanilla bean, split, scraped
- 3 Tbs. honey (dark)
- 3 Tbs. brandy
- ganache:
- 7 oz. bittersweet chocolate
- 1/2 cup cream
- 1 Tbs. brandy
- 24 3" wonton wrappers
- 1 egg
- oil

Preparation
Step 1
chop choc.
gently boil cream
pour over choc.
add brandy and stir smooth
place plastic wrap on ganache surface
refrigerate till cold
wax paper 2 pans
2 tsp. balls (24)
chil 30 min.
beat egg
place filling on wonton, seal out air, press to seal right over left
freeze min. 2 hrs.
can freeze for 3 days
or fry
360-365 degrees
4-5 at a time
1-1 1/2 min.
remove, drain, roll in cinnamon/sugar
cool for a few hrs.
