Blueberry Coffee Cake

Ingredients

• Glaze:
• 4 cups flour
• 1 1/2 cups sugar
• 1 Tbsp plus 2 tsp baking powder
• 1 1/2 tsp salt
• 1/2 cup shortening
• 1 1/2 cup milk
• 2 eggs
• 4 cups fresh or frozen blueberries
• 2 cups icing sugar
• 1/2 cups butter
• 1 tsp vanilla
• 1/3 cup water or as needed
• Topping:
• 1 cup sugar
• 23 cup flour
• 1 tsp cinnamon
• 1/2 cup butter

Preparation

Step 1

Preheat oven to 375 degrees. Grease 2 9 by 9 pans (cheese cake pans work well). Mix everything except berries. Beat vigorously for 1/2 minute until mixed. Fold in berries. Sperad 1/2 into each pan. Sprinkle with topping. Bake until done - 40 to 45 minutes. Glaze.
