Ingredients
- 1 cup plain natural yogurt
- 1/2 long thin English cucumber, peeled
- 2 cloves garlic, minced
- 1/2 teaspoon fine sea salt
- 2-4 fresh mint leaves or 1 teaspoons dried mint
- 1 teaspoon extra-virgin olive oil
- fresh mint sprigs, for garnish

Preparation
Step 1
At least 1 hour before making, place yogurt
into a cheesecloth lined colander, or use a yogurt strainer. Allow yogurt to drain, discarding the liquids. In processor, finely dice the cucumber, and then add strained yogurt and remaining ingredients. Blend well. Garnish with a drizzle of olive oil and fresh mint. Serve with sauteed vegetables, fried zuchini, or lamb. Also great as a cracker or bread spread.
